First Morning Hashbrown and Egg Casserole

Bernice (our masterful food coordinator) mentioned that there were a few of you asking for the Hashbrown and Egg Casserole recipe so here it is!

INGREDIENTS:
1 (2 pound) package frozen hashbrowns, thawed
1 pound pork sausage
1 small onion, diced
5 eggs
1/2 cup milk
1/2 teaspoon onion powder
1/8 teaspoon garlic powder
salt and ground black pepper to taste
12 ounces shredded Cheddar cheese

DIRECTIONS:
1.    Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.
2.    Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.
3.    Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

If you would like to visit the original recipe on allrecipes.com click here.

Side note about the recipe from Bernice...  P.S.  I made this the night before and baked it in the morning.  So to avoid the hashbrowns getting soggy,I baked then at 350 for 1/2 hour on a cookie sheet, then added the egg mixture. I also added more eggs as that is what some of the reviews suggested, so for a cookie sheet, I used 10 eggs and about 3/4 cup milk or cream milk.  I think I used more cheese as well!! :)  We all love cheese!!  Enjoy!

Chocolate Zucchini Loaf

As fall quickly approaches, and school gets into full swing, you may be looking for some great recipes. Here is one that I just tried and the whole family loved. I stumbled upon this receipt on a site I found called Six Sisters Stuff.  It's an amazing blog started by six sisters who use it to keep in touch with one another and share with each other.

Chocolate Zucchini Bread
Recipe adapted from Taste of Home

Ingredients:
-1 1/2 cups sugar
-1 cup unsweetened applesauce (can substitute 1 cup canola oil)
-3 eggs
-3 teaspoons vanilla extract
-2 1/2 cups all-purpose flour (I used 1 1/2 cups all-purpose and 1 cup whole wheat flour)
-1/2 cup baking cocoa
-1 teaspoon salt
-1 teaspoon baking soda
-1 1/2 teaspoons ground cinnamon
-1/4 teaspoon baking powder
-2-3 cups shredded zucchini
-1 cup chocolate chips (optional, but they taste amazing!)
Directions:
In a large bowl, beat the sugar, applesauce, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Fold in chocolate chips. Transfer to two 8-in. x 4-in. loaf pans coated with non-stick cooking spray.
Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves (12 slices each).

Mexicali Pasta Salad

Here is the salad that I was planning on making for the Salad Night this past Tuesday. I have since made it for my family and everyone loved it. A great summer side dish. I found it on the http://www.kraftcanada.com website. Enjoy:)

4cups wagon wheel pasta, uncooked (I used egg noodles, it's what I had!)
1 can (19FL oz/540ml) rinsed and drained black beans
1 cup thawed corn (I used 1 can nibblets corn)
1/2 cup chopped red pepper
2 green onion thinly sliced
1/2 cup Ranch Dressing
1 Tbsp Taco Seasoning Mix (I used spicy as I like more zip!)
1 Tbsp lime juice
1/2 cup shredded cheese
1/3 cup minced fresh cilantro (I did not have any, and it was fine without)

Cook Pasta until done. Drain, and rinse with cold water. Drain will. Place in large bowl. Add next 4 ingredients. Mix. In seperate bowl mix dressing, seasoning mix, and lime juice. Add to salad and toss to coat. Top with cheese and cilantro.

Land of Nod Cinnamon Buns

If you are looking for a yummy and easy recipe for a Sunday morning brunch (or any morning for that matter) here is a great one that was passed along to me. It originated from the Allrecipes.com website. Make it the night before and just pop in the oven in the morning and enjoy!

20 unbaked frozen dinner rolls ( I get them from Safeway in the freezer section)
1C brown sugar
1/4 C instant vanilla pudding mix
2 tsp ground cinnamon
3/4 C raisins
1/3 C melted butter

1.Lightly grease a 10inch bundt cake pan. Place frozen rolls into pan and sprinkle with brown sugar, pudding mix, ground cinnamon and raisins. Pour melted butter over rolls. Cover with a clean damp cloth and leave overnight at room temp.
2.In the morning, preheat oven to 350. Bake rolls for 25min, until golden brown. Turn rolls out onto serving plate and serve warm.

I like to add a few extra raisins, but I know some people who omit them all together!

And now for dessert there are so many options but this should be a little treat for ourselves as well so I think that some individual cheesecakes would hit the spot for me ;) To make this all romantic, and fun for the kids as well, I would go to Michael's and get the silicone heart shaped muffin cups. They are fun and reusable and will look beautiful on little plates on the table.

Super Easy Mini Cherry Cheesecakes
1 package of Nilla Wafers (usually found in the baking aisle)
1 can cherry pie filling
2 eggs
1 tsp vanilla
2 packages of cream cheese
3/4 cup whit sugar
  1. put 1 nilla wafer in the bottom of muffin cup
  2. beat cream cheese, sugar, and vanilla until smooth
  3. beat in 1 egg at a time until smooth
  4. Fill muffin cups 3/4 full of cream cheese mixture
  5. top with a spoon full of cherry pie filler
  6. bake for about 20 min at 350 degrees
  7. let completly cool before putting in the fridge and chill for 2 hours
  8. yields for me between 12-24 cakes depending on how big I want them. Just go with it you can't make mistakes with cheesecake :p

Before serving garnish with a dollop of whip cream and shaved chocolate and a maraschino cherry on top and have a fantastic evening.
